Uneven fondant shows. A patch rolled a little thinner tears on the edge of a tier; a thicker patch leaves a bump that no smoother will hide.
The coloured spacer rings sit on the worktop and lift the pin to a fixed height, so you stop guessing and the whole sheet comes out level. The smooth surface does not grab the paste, and at 22.5 cm the pin is the right size for cut-outs, plaques and small covers.
